Cheesy Chicken Spaghetti

A New Favorite

My sister-in-law, Tina, Aunt T, Auntie, or T (she answer's to them all) - found this yummy recipe online and made it for my parents.  She then shared the recipe with my mom who shared it with me and now I'm sharing with everyone because this recipe is too yummy for not share with my family and friends.  I've changed and adapted the recipe so here it is:

Ingredients:
2-3 chicken breast or 1 whole rotisserie chicken
       (You are going to need 3 cups of cooked chicken - I use 3 chicken breast)
2 Cans of Chicken Broth - or broth from boiling chicken
       (Since I started with raw chicken breast, I boiled them in 8 cups of water and 2 chicken bullion cubes)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel tomatoes
1 box spaghetti noodles (I used whole wheat and it didn't affect the taste)
8 oz Velveeta cheese (the smallest box)
Shredded cheddar cheese
salt & pepper

*Diced onions, bell peppers, olives, and/or mushrooms can be added to the dish - I just don't have any on hand today and I'm NOT going to the store again this week!!!

Directions: 

Cook the Chicken - 
I chose to boil 3 chicken breast in 5 cups of water with a bullion cube.  If you bought a rotisserie chicken, then skip this step.

Chop/Shred your Chicken until you have 3 cups of cooked and chopped chicken.

In the broth from boiling the chicken (or in the 2 cans of chicken broth), cook your noodles until al-dente or very firm (don't worry, they'll cook more in the oven).

Drain noodles but save broth (I put my strainer over a mixing bowl and pour all the noodles out of the pot).  Set noodles aside.

In the same pot, put rotel, mushroom soup, chicken soup, and 2 cups of broth.  Let simmer for 10 minutes.

Add chicken, noodles, and velveeta to pot and mix well.  Salt and Pepper to taste.

Pour in a 9x13 casserole (or if you want to eat one and freeze one you for later  and use 2- 8x8 pans).

Bake at 375 degrees for 30 minutes.  You can stir it around 15 minutes to evenly distribute the melting velveeta.  Also at the 15 minute mark you can top it with shredded cheddar cheese
